Dry; excellent acidity (3.2 pH). Light body; fresh; easy drinker; no tannins. Some complexity from five months on the lees with extended finish, especially for an albariño. 100% albariño. Fermented in stainless steel, no oak influence. 14.5% ABV

Pazo Señorá is a 16th century Galician ancestral house converted into a winery. The first vintage was 1989. Marisol Bueno and Javier Mareque were the original winery owners. Their four children, Marisol, Vicky, Javier, and Santiago, run the operation today.

The winery notes: “The origin of the name Pazo Señoráns is unknown: we do not know whether it was the place that gave the Pazo its name or whether the Pazo that gave its name to the place.”

Pazo Señorans Albariño, Rias Baixas, Spain 2020 is classic albariño: clean, crisp, excellent acidity, saline elements from the vineyard’s proximity to the Atlantic Ocean. Excellent fruit. Balanced, versatile. Pair with shellfish; lean fish; freshwater fish; sushi; Iberian fare: gazpacho, calamari; pasta dishes with white sauces; vegetarian fare; appetizers and snacks, especially briny olives. Cheese—soft cheeses like burrata, semi-hard cheese: manchego, gouda, salty feta, comté, halloumi. $18-23
