Brut; lively mousse, fine bubbles that fade somewhat quickly. This is 100% glera grape prosecco, but it is not made with standard prosecco method using a tank. This is “metodo classico”—the traditional method of second fermentation in the bottle. After initial fermentation, it spends at least 10 months of re-fermentation and lying on the lees in bottle before disgorgement. The wine then spends six months in bottle before release to the public. The result is a striking prosecco with mature fruit flavors, depth, complexity.

Valdo is part of the Bolla Family of wines and is one of the leading makers in Valdobbiadene. Valdobbiadene is a leader in prosecco and sparkling wines in Italy. Valdo places emphasis on controlling the entire production process. They grow the grapes, harvest the grapes, control the vinification, bottling, and packaging. It was a regional maker in the beginning, but began expanding its market in the late 1950s. By 1960, it was sold throughout Italy. By 1990, it found distribution in Europe, the Far East, and then the Americas. Valdo USA was established in 2017 to serve its expanding market in the Americas.

Valdo Numero 10 Brut Valdobbiadene Prosecco DOCG 2019 is a sophisticated, nuanced version of prosecco made using the traditional method instead of the much more common tank method. Harmonious, creamy, sophisticated. Nice presentation of classic glera flavors. Works nicely as an aperitif. Pair with seafood, fish, shellfish; white meat dishes; pork.
